- Butter: 2 tablespoons unsalted butter
- Heavy cream: 1 cup
- Parmesan cheese: 1 cup freshly grated
- Milk: 1/2 cup whole milk
- Pasta: 12 oz 340 g fettuccine or linguine
- Garlic: 3 cloves minced
- Onion: 1 small finely chopped optional
- Fresh parsley: 2 tablespoons chopped plus more for garnish
- Salt: 1 teaspoon plus more to taste
- Black pepper: 1/2 teaspoon
- Ground nutmeg: 1/4 teaspoon optional
- Chicken broth: 2 1/2 cups low sodium

Instructions
- Step 1:
- Heat the butter in a large deep skillet or Dutch oven over medium heat Add chicken pieces and cook for 45 minutes until lightly browned but not fully cooked through Remove chicken and set aside
- Step 2:
- In the same pot add onion if using and sauté 23 minutes until softened Add garlic and cook for 1 minute until fragrant
- Step 3:
- Pour in chicken broth heavy cream and milk Stir to combine and bring to a simmer
- Step 4:
- Add pasta to the pot ensuring its mostly submerged Reduce heat to medium low Cover and cook for 810 minutes stirring occasionally to prevent sticking until pasta is nearly al dente
- Step 5:
- Return chicken to the pot Continue to cook uncovered for 57 minutes stirring often until chicken is cooked through and pasta is tender
- Step 6:
- Stir in Parmesan cheese salt pepper nutmeg if using and parsley Cook 12 minutes more until the sauce thickens and coats the pasta
- Step 7:
- Taste and adjust seasoning as needed Serve immediately garnished with extra Parmesan and parsley
